BIBI’S GUACAMOLE

Makes a dip for 2

INGREDIENTS

  • 1 ripe avocado
  • ½ small onion, very finely diced
  • ½ tomato, finely chopped
  • small handful of coriander, finely chopped
  • juice of ½ lemon
  • dash of tabasco
  • salt
  • pepper

METHOD

Half, de-stone then peel avocado.

Add salt, pepper, and lemon juice.

Blend until smooth or use a fork for a rougher more rustic texture.

Add onion, tomato and coriander and mix well.

Taste and adjust seasoning if necessary.

DON’T EVEN ATTEMPT TO MAKE GUACAMOLE UNLESS YOUR AVOCADOS ARE PERFECTLY RIPE.

IF YOU FIND YOURSELF WITH A ROCK HARD AVOCADO TRY PLACING IT IN A TUB WITH LEMONS OR LIMES AND PLACE ON A HIGH SHELF IN THE HOTTEST PART OF THE KITCHEN.

THE HEAT ALONG WITH GASES FROM THE FRUIT WILL RIPEN THE AVOCADOS WITHIN 1-2 DAYS!
